Cathy's Orange Muffins

  • 1/2 cup butter
  • 2 cups sugar
  • 1 orange (for juice and grated rind)
  • 3/4 cup sour cream
  • 1/2 cup raisins
  • 2 cups flour
  • 1/2 cup chopped nuts
  • 1 teaspoon soda
  • 1 teaspoon salt

  1. Topping: Mix together 1 cup of sugar and the juice of one orange (about 1/2 cup) and set aside for dipping the muffins before they are baked.
  2. Muffins: Cream 1 cup sugar and butter. Add flour, soda, salt and sour cream. Stir until just mixed together. Fold in orange rind, raisins and nuts. (This is a stiff batter). Use a well-greased muffin tin. Bake at 350 degrees for 12 - 15 minutes. While muffins are warm, dip them in the sugar and orange topping. Cool on wire rack. Makes 12 muffins.
