Honey Peach Muffins

Ingredients:

  • ¾ c. flour
  • ¾ c. cornmeal
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ¼ c. margarine
  • ¼ c. honey
  • 1, 8-oz. container of low-fat peach yogurt
  • 1 egg white
  • ½ c. coarsely chopped, drained peaches

Instructions

Directions:

  1. Heat oven to 375°.
  2. Spray bottoms of muffin tins.
  3. Lightly spoon flour into measuring cup and level.
  4. In large bowl, combine flour, cornmeal, baking powder, baking soda and cinnamon.
  5. In a medium bowl, combine margarine, honey and yogurt; beat at low speed until well blended.
  6. Add egg white; blend well.
  7. Add to flour mixture; stir until just moistened.
  8. Gently stir in peaches.
  9. Spoon batter evenly into muffin cups.
  10. Bake at 375° for 17-23 minutes or until tops are golden brown.
