Chicken Wild Rice Soup
Ingredients
1 medium onion, chopped
2 celery ribs, diced
2 carrots, diced
½ C. butter
½ C. flour
4 C. chicken broth
2 C. cooked wild rice (or 1/2 C. uncooked)
2 C. half & half
2 C. diced chicken
1 t. dried parsley
½ t. salt
¼ t. pepper
Instructions
Sauté the onion, celery, carrots in butter. Add flour and cook until bubbly. Add the chicken broth and bring the mixture to a boil for one minute. Reduce heat and add remaining ingredients. Simmer for 20 minutes.
