Chicken Wild Rice Soup

8-10 servings

Ingredients

  • 1 medium onion, chopped
  • 2 celery ribs, diced
  • 2 medium carrots, diced
  • ½ cup butter
  • ½ cup flour
  • 4 cups of chicken broth
  • 2 cups of cooked wild rice
  • 2 cups of half-and-half  cream
  • 2 cups of diced cooked chicken
  • 1 tsp. dried parsley flakes
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

In a Dutch oven or soup kettle over medium heat, sauté onion, carrots, and celery in butter until onion is transparent. Reduce heat. Blend in flour; cook and stir for 2 minutes. Gradually add broth, stirring constantly. Bring to a boil; cook for 1 minute then reduce heat. Add remaining ingredients; simmer for 20 minutes.
