Broccoli Cheese Soup
Recipe Yields 8 servings
Ingredients
- 1 yellow onion, diced
- 1 stick butter
- 4 c chicken broth
- 2-16 oz bags frozen broccoli
- 1 c evaporated milk
- 1 c whole milk
- 1 lb Velveeta cheese
Directions
Sauté onion in melted butter until very soft. Add chicken broth and broccoli-simmer until tender. Use potato masher to break down broccoli slightly. Add both milks and cheese, stir until melted and hot.
