By far, one of my favorite things about any fair is all of the delectable food that tempts one’s taste buds. One of the many delicious treats that you can try at the Latham Country Fair in Alexander, Iowa, July 30, are Cathy’s Orange Muffins. (See recipe below.)
Cathy’s baking is special to our family because she not only bakes incredible treats like these orange muffins, but she has also made cakes for our children’s birthday parties. She’s helped make many memories at our family events.

Cathy’s Orange Muffins

- 1/2 cup butter
- 2 cups sugar
- 1 orange (for juice and grated rind)
- 3/4 cup sour cream
- 1/2 cup raisins
- 2 cups flour
- 1/2 cup chopped nuts
- 1 teaspoon soda
- 1 teaspoon salt

- Topping: Mix together 1 cup of sugar and the juice of one orange (about 1/2 cup) and set aside for dipping the muffins before they are baked.
- Muffins: Cream 1 cup sugar and butter. Add flour, soda, salt and sour cream. Stir until just mixed together. Fold in orange rind, raisins and nuts. (This is a stiff batter). Use a well-greased muffin tin. Bake at 350 degrees for 12 – 15 minutes. While muffins are warm, dip them in the sugar and orange topping. Cool on wire rack. Makes 12 muffins.
