Math has never my favorite subject. Honestly, the only way I’ve ever really enjoyed working with fractions is by measuring ingredients in my kitchen. Yet there is a group of math-loving Americans who celebrate Pi Day in commemoration of the mathematical constant of a circle’s circumference to its diameter, known as π (pi), 3.14 or 3/14.

When I think of a circle’s circumference, I think of a pie plate. Pie plates make me think of…

What’s better than muffins hot from the oven on a cold, winter’s day? I adore muffins, so today I’m sharing with you a recipe that I’ve been wanting to try since last fall. Perhaps I’ll get around to it this weekend!

Pumpkin Pie Muffins

Ingredients

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 5 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 (30 oz) can pumpkin pie filling (such as Libby’s®)
  • 3 cups white sugar, or more to taste
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 4 large eggs

Directions

Directions:

  1. Preheat oven to 330°F.
  2. Grease 24 muffin cups or line with paper liners.
  3. Mix whole wheat flour, all-purpose flour, pumpkin pie spice, baking soda, and salt together in a large bowl.
  4. Whisk pumpkin pie filling, sugar, oil, water, and eggs together in a separate bowl until just mixed.
  5. Stir flour mixture, about 1/4 cup at a time, into pumpkin mixture until batter is just combined.
  6. Fill muffin cups with batter just below the brims.
  7. Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 30 minutes.
  8. Cool muffins on a wire rack.
