With the kids getting more and more involved with school and extra curricular activities, I am always looking for quick fix meals I can prepare for supper before games and meetings in the evening. This recipe for sloppy joes is one that the kids love, and the leftovers are great for later on in the week.

Soups that warm the heart
These recipes were submitted by one of our Latham dealers in Everly, Iowa. Every Christmas Eve, their family has soup night. Here are a couple of their favorite soup recipes. Perfect on these cold winter nights.
Potato Cheese Soup
Ingredients:
- 6-8 potatoes, peeled and cubed
- 2-3 carrots, sliced
- 1-2 celery stalks, sliced
- 1 small onion, chopped
- 1 pkg. (8oz.) cream cheese, softened
- 1/4 c. butter, softened
- 1 can (10 and 3/4 oz.) condensed cream of chicken soup
- 2 c. milk
- salt and pepper to taste
- crumbled bacon
- green onion, diced
- shredded cheddar cheese
Directions:
- Place potatoes, carrots, celery, and onion in large kettle, cover with water.
- Cook until tender, about 15-20 minutes.
- Meanwhile, in mixing bowl combine softened cream cheese, butter, and cream of chicken soup. Combine until smooth.
- Gradually add milk, salt and pepper.
- Before adding to vegetables, drain most of the water from kettle, depending how thick you prefer the soup.
- Add creamed mixture to the kettle and heat slowly.
- Before serving, I sprinkle each bowl with a little bacon, green onion and cheddar cheese.

One-Dish Family Favorites
Making home-cooked meals is something that I really enjoy doing- when I have the time! Time is in short supply for many moms like me who find themselves working every day and then chauffeuring kids to various activities every night.
That’s why I try to make meals ahead of time, freeze them and save “prep time” during the busy week. Other times I make casseroles (one-dish meals) in the morning, so I can simply pop them in the oven at the end of the day. I also love crock-pot recipes. In fact, that’s the only way I’ve ever cooked a roast! Roast Pork with Raspberry Sauce tastes “gourmet” but can easily be served on a weeknight.

Sharing Christmas Traditions
When I was growing up, it was an annual tradition for my mom and I to bake homemade sugar cookies, decorate them and then deliver them to widowers in our community. I loved the way the older men’s faces would light up when they opened the door to find us bearing treats. It was such a good feeling to “bake someone happy.” Delivering the cookies was just as much fun as spending time in the kitchen with my mom.
And making the cookies was lots of fun! I would don my own pint-sized apron as I attempted to frost the cookies. Mostly I watched in awe as my mom would “paint faces” on the Santa Clause cookies. She would literally use a paintbrush to put egg whites where Santa’s cheek should be and then sprinkle red sugar there. A marshmellow would make the ball on Santa’s hat. A red hot was used for his nose. Raisins were used for his eyes. Coconut flakes added dimension to his beard.
Although I’m not as artistic as my mom, I do continue the tradition of sharing home-baked cookies with widowers in our community. Last season my daughter and I delivered plates of home-made gingerbread muffins and pumpkin muffins, along with bags of egg nog- and and gingerbread-flavored teas. And as much as I love baking muffins, my favoite part is still making people smile when we deliver the goodies.
